Green Bean Chicken Salad with Lemon Tahini Dressing

Tahini is a paste made from roasted hulled sesame seeds and is used often in Middle Eastern food. Sesame seeds are rich in calcium, magnesium, copper, vitamin B1, zinc, and fiber. Mixing tahini with lemon, olive oil, and garlic is a quick way to add flavor and depth to any salad or casserole.
Serves 4-5
Time to prepare: 25 minutes
Ingredients:
1 Tb coconut oil
1 lb boneless chicken breast or thighs, cubed in 1” pieces
1 lb green beans, trimmed and cut in half
1 lb cherry tomatoes, sliced in half
1/3 cup tahini
1/4 cup olive oil
2 Tb fresh lemon juice
1-2 cloves garlic, minced
Method:
Add coconut oil to a sauté pan over medium-low heat. Add green beans, and cook, covered, for about 7 minutes. Add chicken and cook, covered, for an additional 5 minutes, stirring every couple of minutes, until chicken is cooked through. Remove from heat and place in serving bowl.
Meanwhile, mix tahini, olive oil, lemon juice and garlic in a small bowl or large measuring cup, using a fork, whisk, or handheld blender to fully blend ingredients.
Add sliced tomatoes to chicken and green beans in a serving bowl. Pour in tahini sauce and stir until combined.
Best served at room temperature, but can be eaten warm or cold.
